I sometimes lie semi-conscious with the knowledge that I am struggling to breath. I often focus on sitting up or simply gasping for air but it’s like a dream where it just doesn’t happen. Is this a form of sleep apnea or is this something different?

    Sounds like sleep paralysis. I’ve never had it, but I did a thesis on sleep and it sounds freaky as hell. It is where you are awake (conscious), but the motor control part of your brain thinks you are asleep, so it doesn’t let you move. A person is still usually able to breathe, though. Maybe it is a combination of apnea and sleep paralysis.
    As a side note- apnea is horrible for your physical and mental health. If it becomes a problem, or ou feel tired all the time, you might want to visit a sleep clinic. If not, a little googling goes a long way. Good Luck!
